Absolutely, Dr! Give me a 12 oz steak and my body glows from the inside out. It's hard to explain to someone who eats a Standard American Diet. You eat it and don't feel guilty.
I like to season my raw steaks on both sides and edges, then place them on a wire rack to ensure good air flow over every surface. They go into the fridge overnight or longer. Initially, the salt draws moisture out of the meat. As it sits in the fridge, that moisture is drawn back into the steak, taking that salt with it. The dry refrigerator air dries the surface of the meat so when you cook your steak, it starts to develop that nice crust instead of steaming it for the first few minutes.
I have piece of brisket I did low & slow in my Dreo air fryer, seasoned & wrapped in parchment. This appliance has a water reservoir for sous vide that I put mesquite wood chips in the water. Then after resting I air fried to create a crust. I haven’t eaten any yet bc it cooked overnight. Can’t wait to re sous vide as you’ve clearly described to reheat! This may be my favorite way to do brisket! I have several more hunks of brisket cut to the size of the same appliance in the freezer to play around with next time too🎉🎉🎉🎉
