Before humans became gatherers, what did they eat for carbs?
We have always been gatherers, but if I understand the intent of your question, you are asking how humans were able to get access to large amounts of simple carbohydrates before industrial agriculture came along?
The answer is that humans mostly didn't. Our carbohydrate-rich diets are a very recent development (excepting fiber, of course). While early humans might occasionally get access to a trove of honey or some unusually nutritious roots, it was very unusual for them to get meals that were heavy in carbohydrates. This just does not exist in nature for the most part. The carbohydrate-rich fruits and vegetables that we eat today are almost entirely unnatural, engineered species that we have bred over thousands of years. They did not exist in early prehistoric times.
EDIT: If I am unclear, certainly one can readily find plants rich in fiber, which is a carbohydrate, of course. But the human body cannot digest fiber, so it simply passes through the body. Of course, a moderate amount of fiber is actually good for your digestion, but it does not provide any nutrition. Starches and sugars are the carbohydrates our bodies can digest, but it is hard to find these in high concentrations in most natural plants. The plants today that have large concentrations of starch and sugar are mostly artificial. That is, these are plants that have been bred over thousands of years by humans. They did not exist for almost all of human history.
