Hold up. Are we saying deer don't eat plants? No. Deer are herbivores, though deer will eat birds, eggs from nests, and other sources of meat for protein on occasion. Many animals that we consider plant eaters will in fact consume meat when given the chance or when it's needed. That doesn't necessarily mean deer are omnivorous, but their potential range of diet does mean they are not strictly vegetarian. Or vegan! Let's explore how a deer's stomach works, and how deer digest food. Why do deer and other ruminants have four stomachs? We'll see that inside the deer's first "stomach", the rumen, there lives a community of microorganisms that do the heavy work of plant digestion by converting cellulose to carbohydrates, sugars, and volatile fatty acids. It turns out that the creatures in the deer's microbiome actually provide the deer and other ruminants with major portions of their energy and protein! Yes, deer will eat meat on occasion. But more importantly deer are able to live on plants by providing vegetation to a large biomass of hungry bacteria and protozoa that have animal like behavior, including herbivory and predation, with food.
