My grandfather made his own bacon, ham & sausage from his own pigs in a smokehouse until it went up in smoke and after he cooked the bacon he sopped up the grease with homemade biscuits. He had no heart problems and perished from a medical error at age 96. He also had chickens, a milk cow, a melon patch, vegetable garden, hickory nuts and fruit trees. He was born in a log cabin in the Louisiana woods in 1886 and told me some wild stories about how they survived off the land back then. His sisters lived to age 103 and 105.
I was in high school when they switched from beef tallow to vegetable oil, and I remember them mentioning it briefly. At the time, I didn’t question it, but now I realize the term "vegetable oil" is misleading. It’s actually oil from soybeans, rapeseed, sunflower seeds, and corn, which are seeds, not vegetables. Back then, no one was concerned about seed oils, and as high school kids, we just ate whatever while working for a paycheck, not really thinking about it.
When i worked at Mcdonalds as a teenager one of my jobs was to make sure the air freshner sprays in the dining area always had gas. They told me this was important because the spray had some chemicals in it that was supposed to stimulate appetite. Another job was changing the oil in the deep fryers, up until the late 90's we used beef tallow and the fries tasted amazing. Then we switched to vegetable oil because it was cheaper and the fries have never been as good. They also used to use proper mayonnaise which also tasted amazing and then switched to a cheap substitute called chicken sauce which tastes terrible in comparison.
